One of the mums at my current school is from Scotland and from time to time she brings in freshly baked scones for me and the staff.
And they are always soooo good! 😉
I asked her to share her recipe and it turned out to be really simple and no sugar added!
I just had to give it a go, no?
It was a big success and I’ve made them lots of times since then.
What do you need?
400 gr of self-raising flour (could be a mix between white and wholewheat or just plain white), 100 gr of margarine, a teaspoon of baking powder, a pinch of salt and 225 ml of milk (soya or pasteurized)
What do you do?
Put the flour, the baking powder, the salt and the margarine in your food processor (with a rotating blade) and whizz until it looks like breadcrumbs.
If you don’t have one, just use a large bowl and chop up the margarine or butter with a knife and rub between your fingers until you achieve the breadcrumb consistency.
Get your mixture out of the processor and put it into a large bowl.
Add the milk and use a spatula to bring it all together. By now, the mixture should be sticking together.
If you wish, you could add sultanas now.
Roll out the dough (2 cm thick) and cut out 10 round shapes (5 cm) (or just spoon some small heaps of dough directly on your baking tray/greaseproof paper).
Place the rounds on a baking tray covered with greaseproof paper and bake at 200 degrees for about 12-15 minutes.
I served the scones still a bit warm with fresh cream and low-sugar jam.
And then… you’re in heaven! 😉
