This super easy recipe is based on a Jamie Oliver recipe. The only thing different is that he used apricots where I used wild peaches, I added lemon curd (of course!! ;-)) and I only added the basil leaves afterwards instead of mixing them into the cheese mixture (but please feel free to do so!).

This flat pie is so easy to make and my guests just loooved it!

What you need is a roll of puff pastry, 250 gr of mascarpone, the

zest of one orange, lemon curd, peaches, some cane sugar and a few basil leaves.

 

Roll out the dough onto a baking tray lined with baking paper, don’t forget to pierce the dough with a fork and create and edge as well . Spoon the mascarpone together with the orange zest and a big dollop of lemon curd and spread out on top of the pastry.

 

 

Sprinkle some sugar on top and bake for about 30 min in a 200 degree oven. When slighty cooled, scatter some basil leaves on top and serve.
